1 lb shrimp
1 tablespoon cornstarch
1 cup green beans, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/2 orange bell pepper, chopped
5-6 scallions or green onions, chopped
5 garlic cloves, finely chopped
1 tablespoon ginger, finely chopped
1/2 teaspoon of salt
1 teaspoon of pepper
3 tablespoons oil
5 teaspoons sambal oelek chili paste
2 tablespoons oyster sauce
1 tablespoon of soy sauce
1 tablespoon rice or white vinegar
2 tablespoons of rice wine
3 tablespoons tomato ketchup
1 teaspoon of sugar
- Clean the shrimp and marinate them with salt, pepper and cornstarch while you prepare the rest of the ingredients.
- Mix all the ingredients for the sauce in a bowl.
- Dice all the peppers, cut the green beans and green onions into 1-inch-long pieces. keep the green and white parts of the green onion separate.
- Heat 2 tablespoons of oil in a wok over medium-high heat. Add the prawns and sear them for a few minutes, until they roll up a bit and turn pink. Dress them up and set aside. Do not overcook, as they will continue to cook in the Hunan sauce later.
- Add the rest of the oil and increase the heat to high. Add green beans. Stir and cook for a few minutes, until they become a little soft. Stir in peppers, white parts of green onions, ginger and garlic. Stir-fry for 4-5 minutes then stir in the prepared Hunan sauce. Add 1/4 to 1/2 cup of water with the shrimp and sauté for another 3-4 minutes. Garnish it with green parts of green onions.
- Serve it hot over your favorite steamed rice.
