RC Ranch, which specializes in Texas wagyu, is located in the small town of Bailey’s Prairie near Angleton. He has good news for Houstonians, however: he’s bringing his meats to a new local retail store. On Friday, December 17, his first showcase, RC Ranch Texas Craft Butchers, opens at the Houston Farmers Market, located at 2520 Airline.
Blake robertson and Ryan cade started the ranch in 2010 (the letters RC stand for their last names). In addition to their own Wagyu, they also sell meat from other suppliers that meet certain quality standards including humane handling of livestock and sustainability. These include the Texan companies Holmes Foods, which Poultry, Lonestar Seafood and Capra Foods, which provides Lamb Dorper. There is also a live tank Maine lobsters.

For its Wagyu, RC Ranch incorporates three lines, each from a different region of Japan, intended to produce large cows and well marbled beef: Kedaka, for size, Tajima for marbling and Shiname, which they say are cattle with “the best traits.”
The Houston Farmers Market shop offers in-house dry-aging steaks and makes their own sausages, which are then smoked in a J&R Oyler pit. Breast tips, shanks and bones will also go into the pit and be available for sale. The cold cuts are also homemade.
For people who don’t have much time to cook, the chef Matthew Coburn, former chef de cuisine at Georgia James Tavern, is in charge of developing meal kits, such as chuck roasts and vegetables, and fully prepared and ready-to-cook meals. Those who love to cook can also find items of interest such as tallow oil and butter. Another former Underbelly Hospitality, former cook of the UB Preserv chain Easton Sadler is the shop’s full-time butcher.
In addition to retailing, the RC Ranch store can also ship to other states as well as service wholesale accounts. The showcase is open every day from 8 a.m. to 7 p.m.
