Rosa Mexicano, a restaurant group deeply rooted in authentic Mexican cuisine, announced the launch of its new menu and new image after almost a decade. The complete new change is one of Chef Manuel Trevino’s first moves as the new vice president of cuisine for Rosa Mexicano. Drawing much inspiration from his early childhood and culinary expertise over the years, Trevino reintroduces perfectly crafted signature dishes, cocktails and shared plates with a “new twist” on fine Mexican cuisine.
The vision and motivation behind the complete menu overhaul was to position and showcase Rosa Mexicano’s “high fiesta” mantra in every sense of the word, not only in their culinary endeavors, but also in interiors, menus , website, uniforms, etc. The modernized look of the menu and the rebuilding of the brand took several months, but was eventually rolled out to all restaurants.
New menu items include Ceviche, Parrillades, Black Bean Empanadas, Camarones al Ajillo, Birria Questacos, as well as an update to their already signature Guacamole now served with a variety of new additions including Grilled Pineapple Pico, Bacon and Cotija, and Lump Crab Meat. Additionally, Manuel revamped the cocktail menu with Instagram-worthy cocktails such as the Smokey Cosmorita, Spicy-Cucumber and Blood Orange Sunrise, in addition to keeping some of his classic favorites such as the Josefina Margarita made with Komos Rose Tequila and the signature pomegranate margarita – a staple since 1984 when the restaurant first opened.
