What dishes make up America?

That’s precisely the question chef Marcus Samuelsson had to ask — and answer — when conceptualizing this year’s Met Gala menu, “In America: An Anthology of Fashion.” His conclusion, of course, was that this country’s cuisine is as diverse as its 330 million people. There is the cuisine influenced by immigrants from coastal cities, the soul food of the South, the vegetable movement increasingly adopted by younger generations. So he asked three utterly impressive and individual chefs to imagine America’s varied ideals: Lauren Von der Pool, Melissa King and Amirah Kassem.

“They represent very different places in American cuisine today,” Samuelsson says of his selection. “Amirah has the most amazing cakes. Lauren has been engaged in the vegan and vegetarian food space for decades. Melissa is just an amazing chef. I have had the opportunity to eat his food on many occasions and am always very impressed with his talent. »

As different as these leaders are, Samuelsson noted one characteristic that he believes unites them: being of the moment. Von der Poole, King and Kassem do not cook with a nostalgic objective, but rather focus on developing a distinct style that is completely unique. “This menu is a celebration of three amazing American chefs right now: it’s the present/future for me,” says Samuelsson.

So what did they serve at the Met Gala? Let’s start with Von der Pool, who was in charge of the appetizer hors d’oeuvres. A plant-based chef, she put her own twist on classic deviled eggs, using Yukon potatoes instead of animal products. Other past appetizers include rice cakes topped with collard greens and cucumber salsa, truffle potato bites, and coconut ceviche. “What would America be without crops like corn, squash, dandelion, cabbage, beans, and burdock root? I wanted to focus on the vegetables that give America its flavor,” says Von der Pool. vogue. “Each appetizer tells a story, primarily about the depth of America, not just its opulence.
