An upcoming Japanese Canadian Heritage Cooking Class is part of a year-long series highlighting family and community recipes dating back to pioneer times.
The 90-minute class, priced at $10-$15, will be led by guest cook Carmel Tanaka “and her cross-generational cooking team.” Tanaka describes herself as a “foodie with ‘secret’ family recipes” and “a granddaughter of Holocaust survivors and interned Japanese Canadians, and [I] proudly identifies as ‘Jew'”.
This latest installment in the 2022 series of demonstrations and tastings will take place next Wednesday (August 24) at Tonari Gumi (the Japanese Community Volunteers Association) at 42 West 8th Avenue, from 6-7:30 p.m.
The series is presented by Tonari Gumi, the Japanese Canadian Citizens Association of Greater Vancouver and the Vancouver Japanese Language School and is described as “a simple hands-on cooking workshop experience with great meals at the end”.
On the class’s “menu” – described in a statement as Old School/New School: Intergenerational Cooking With Carmel Tanaka – is grilled and crispy miso-maple rainbow trout with steamed rice. (The previous course featured BBQ grilled salmon onigiri.)
Rainbow trout, or simply “steelhead”, is a marine cousin of our inshore freshwater rainbow trout found in cold water tributaries of the Pacific Basin including in the Pacific Northwest and Northeast Asia.
Side courses are included in some courses, and those on August 24 include grilled and marinated ginger tofu (vegan); Japanese eggplant salad with herbs, olives and rice vinegar; pickled chili and yuzu kosho cukes; maitake rice, millet and buckwheat; and mint plums, apricots, figs and dates.
