Whether you’re cooking leftover roast lamb, roast chicken, roast pork, or roast ham, be sure to save the bones. You can make bone broth or use the bone to make a big pot of red beans and rice. Bone broth is loaded with essential nutrients, so you not only save money making your own broth, but also making healthy choices.

The best bone broths are cooked for longer than 24 hours if you really want to extract those nutrients. But 8 hours will also be enough. Add the sautéed vegetables (carrot, celery, onion) and herbs (garlic, thyme, rosemary), and let simmer before reducing the heat to low. Simmer uncovered for 8 to 24 hours, adding more water as the level drops. Once cooked for the desired time, store in an airtight container and freeze.

You can safely freeze leftover roast lamb. Just make sure it is properly stored in an airtight food container. Roast lamb can be stored for up to three days in the fridge, or up to two months in the freezer. Make sure lamb is completely thawed before using and do not refreeze.

As a general safety measure, avoid thawing meat frozen at room temperature. This gives more chance for bacteria to grow. The most common thawing technique for this type of meat is to put it in the refrigerator.
