IIf I could only eat one food for the rest of my life, it would definitely be potatoes. IMO, they are one of the most versatile (and nourishing ingredients) which can be cooked to perfection in a thousand and one ways. Mashed potatoes, French fries, baked potatoes… Someone please stop me, because the list can go on and on.

During my time at culinary school, the students had access to a large bin of potatoes to practice with the knife, and we used the leftovers in meals later – kind of a no-waste teaching trick. Of course, once we got tired of eating mashed potatoes five days a week (despite my adoration for the dish, we need some variation in their diet), my classmates and I challenged ourselves with hundreds of different creative ways to cook this potato.

TL; DR? Yes, I’m still obsessed with potatoes, and yes, I still cook them almost daily. Here are some of my favorite hearty potato recipes to date – they’re all budget-friendly, versatile, and the perfect side dishes for your next holiday season.

5 Hearty Potato Recipes That Aren’t Regular Mashed Potatoes

1. Aligot potatoes

Pommes Aligot, a classic French dish, is like the upgraded (and way more cheesy) version of mashed potatoes. It originates from the south of France and is made with cream and lots of tomme fondue, a creamy cheese produced in the French Alps and Switzerland. If you picture the most epic of cheeses, this dish would definitely come to mind.

The key to getting the gooest texture from Pommes Aligot is the type of cheese used. Although it may be difficult to find Tomme in the United States, you can also use cheeses that melt well (i.e. the ones you would use for fondue), such as Swiss, Fontina or the county, as demonstrated in this TikTok Video by @iceculinary.

2. Leek and potato gratin

Potato gratin, which is a dish made with creamy potatoes covered in crispy breadcrumbs or golden shredded cheese, was definitely a culinary school staple, and it’s incredibly easy to make. My favorite twist on potatoes au gratin is to add leeks to the base for extra sweetness and flavor. To get the perfect lasagna-like potato layers, I use a mandoline slicer to thinly and evenly slice the potatoes. Then I cook the leeks until golden brown before tossing them with cream to make a sauce infused with herbs and spices like thyme and nutmeg. This heavenly mixture is poured over layers of sliced ​​potatoes arranged in a baking dish and topped with tons of melty cheese (I love Gruyère). Not all delicious potato recipes need to be time consuming or heavy ingredients. That’s why I like to eat plain and simple baked Japanese sweet potatoes, which is a staple ingredient for some of the longest living people in the world. However, when I crave something sweet, I love to burn them, like in this two-ingredient recipe TikTok Video by @veggiekins. All you have to do is cut the potato lengthwise, cook until soft and tender, coat in sugar and flambé until tender. let it be caramelized. Okay, I admit it: my all-time favorite hearty potato dish is definitely Anna potatoes. For starters, it’s a real showstopper. It is made by arranging very thin slices of potato layered in waves that form a concentric shape (similar to the petals of a flower). Besides being gorgeous to look at, it’s super crispy and crunchy around the edges. Most anna apple recipes only call for two ingredients: potatoes and butter.
