Dubai – With Diwali just around the corner, here are some delicious recipes you must try, in the kitchen

Gluten free, refined sugar free, artificial coloring free

Serves: 4 people


• 4 to 5 medium sized potatoes, boiled and mashed

• 2 tbsp. Japanese boiled and mashed rice

• 1 tbsp. grated ginger

• 1 tbsp. wasabi paste

• 2-3 tbsp. coarse ground hazelnuts

• Slices of cheddar cheese, cut into circles

• Salt to taste

•Frying oil

To serve


• Mint chutney

• Date chutney

• Sev

• Grenades

• Fresh coriander


• Mix mashed potatoes with boiled rice, ginger and wasabi paste.

• Add salt and mix well.

• Store the mixture in the refrigerator for 30 minutes.

• Divide the cooled potato mixture evenly and flatten with the palm.

• Insert the circle of cheddar cheese and seal gently.

• Coat it with hazelnut powder and set aside.

• Heat the pan and add oil, fry the tikkis on both sides.

To serve:

• Arrange the tikkis on the serving plate and garnish with yogurt, mint chutney and date chutneys.

• Garnish with pomegranate, cilantro and sev.

Serves: 4 people


• 100 g of lotus seeds

• 1 cup sweet potatoes, boiled and cubed

• ½ cup chopped tomatoes

• 1 cup of roasted puffed rice

• ½ cup roasted peanuts

• ½ cup of Gujrati Gathiya

• ¼ cup of pomegranates

• ¼ cup mint chutney

• ¼ cup sweet date chutney

• 2 tbsp. lime juice

• 4 tbsp. oil

• 1 tbsp. black pepper

• Salt to taste

• Fresh cilantro, finely chopped and into small pieces for garnish


• Heat the oil in the pan and add the shallow fried sweet potatoes.

• Sauté until golden brown and remove from the pan.

• Add the lotus seeds and fry until crispy.

• Add salt and black pepper and let cool slightly.

• Take a large mixing bowl and add the roasted sweet potatoes, chopped tomatoes and roasted rice sprouts, peanuts, Ghatiya.

• Add the lotus seed mint chutney, date chutney, lime juice and mix well.

• Serve in a bowl and garnish with pomegranate, fresh cilantro and sev.

Serves: 4-6 people


• 1.5 cups heavy cream

• 4 cups of milk

• ¼ cup icing sugar

• ¼ cup ready-to-use Thandai syrup

• 9 to 10 saffron threads (soaked in • 1 tablespoon of hot milk and extras for the garnish)

Dry powder

• 2 tbsp. almond powder

• 2 tbsp. cashew nut

• 1 tbsp. black pepper

• 1 tbsp. fennel seeds

• 1 tbsp. cardamom powder


• Grind all the ingredients in a grinder and set aside.

• Boil the milk and add the dry powder. Keep stirring.

• Boil until it reduces to two-thirds.

• Add ½ cup of cream and soaked saffron and remove from heat.

• Let cool completely.

• Mix the cooled milk in the blender with the ready-to-use Thandai syrup.

• Whip the cream with the sugar until it forms soft peaks.

• Fold the cream with the milk and put in the clay pots.

• Let cool for about 4 to 6 hours.

• Garnish with saffron threads and serve.


No artificial coloring

Serves: 12-14 people


• 1 cup of wheat flour

• ¼ cup semolina

• ¼ cup almond flour

• ¼ cup crushed almonds

• 1 tbsp. sandalwood powder

• 2 tbsp. powdered green cardamom

• ¾ cup of ghee

• 1 cup of powdered sugar

• Optional ribbon blade.

• 2 tbsp. extra sugar for rolling.


• Heat the ghee in a heavy-bottomed saucepan and add the semolina and wheat flour.

Roast it with ghee for 3-4 minutes.

• Add the almonds to the mixture and continue roasting.

• Add the almond flour and stir. Roast until it turns golden brown and add cardamom powder and sandalwood powder.

• Remove the pan from the heat and let it cool.

• Add powdered sugar and make laddoos the size of a lime using your palms.

• Roll all the laddoos in powdered sugar and add the silver leaves.

• Serve chilled or in a gift box.
