De Laurentiis says that Alla Norma Pasta is a classic Sicilian dish for a reason. It includes “sweet and creamy eggplant” tossed with pasta in a “brilliant tomato sauce”, which is served in a “ricotta salata snowfall”. She also added a little Parmigiano to the recipe because “why not?”

The ingredients you will need for this dish are: Japanese eggplant, kosher salt, olive oil, garlic cloves, red pepper flakes, San Marzano tomatoes, oregano, short pasta tube, Parmigiano Reggiano cheese, leaves basil and grated ricotta salata.

When you need dinner on the table fast, De Laurentiis’ recipe for pasta saw is perfect because Scuie Scuie literally translates to “hurry up.” She says this pasta was made to her constantly when she was a child and the recipe was passed down to her family.

She says Sciue Sciue is pronounced like “shway shway”, and she promises that this dish is “as fun to eat as it is to say”.

“It’s so simple, but perfect for the summer when you have an abundance of lovely, sweet, ripe tomatoes,” de Laurentiis explained.

This recipe calls for a smaller amount of pasta, about eight to 10 ounces. So, De Laurentiis recommends doubling the recipe so that you can use the whole package of pasta.

5. Alla Caprese pasta from Giada De Laurentiis couldn’t be simpler

One of the quickest pasta dishes on the list is from De Laurentiis Alla Caprese Pasta. It only takes 20 minutes max, and the Food Network star says it’s “perfect” for summer. Especially if you have a bunch of garden fresh tomatoes that need to be used.

“Choose your favorite pasta and toss it with sautéed tomatoes and garlic, basil and fresh mozzarella. Drizzle a bit of your favorite olive oil at the end — and even balsamic, if you like — and you have all the flavors of a Caprese salad in a delicious pasta recipe,” writes De Laurentiis.
