Scrambled tofu

This recipe makes a perfect breakfast. Start by mixing spices like cumin, thyme, paprika and turmeric in a bowl containing three tablespoons of water. Heat a little oil, add the broken tofu and sprinkle with salt and pepper. Let the mixture cook for about seven to eight minutes.

Once the underside of the tofu is golden, add the spice blend and cook for another 2-3 minutes, until the water has evaporated.

This dish is as good as it looks. For this recipe, add the tofu to salted boiling water and simmer for about two minutes. Take it out and cut the tofu into pieces. While still hot, soak the tofu pieces in a mixture of soy sauce, sesame oil and black pepper.

Once done, mix the pieces in the cornstarch, then fry the tofu pieces in very hot oil. Cook until the edges of the tofu are golden brown. Keep them aside and reduce the oil in the pan to a teaspoon.
